Chocolate Rock Fudge

DSC_0622I believe the last time I was posting about fudge I warned that there may be more fudge recipes in the future. And today I’m making good on that threat with my Chocolate Rock Fudge.

My younger brother works at Bulk Barn, one my my favourite stores in the world. It is a great way to cut down on excess waste caused by overpackaging, as all of the food sold in the store sits in giant vats. You grab a bag, scoop out how much you want, then they weight it at the check out counter. As a result, it’s a bakers heaven: you buy as much as you want for  very reasonable prices. On top of that, they also stock multiple types of flour and sugar, a large array of spices, bountiful supplies of baking chocolate, and o the candy aisle. When I was younger, I used to go to Bulk Barn just to buy some candy!

Although we’re just getting used to the idea of it being September, the Bulk Barn powers that be have already decided to market their Hallowe’en products in preparation for the coming month’s sugar-loaded holiday. As I was checking out, I noticed a poster with a cute jack-o-lantern shaped cake. But more importantly what caught my eye was the pile of chocolate pebbles that the plump grinning cake was seated on.

In less than 10 seconds I was out of line and back in line with a large bagful of chocolate rocks. I can’t get over how cute they are! They remind me of Smarties, but in disguise.

Earlier this week, I dropped by my old work to pick up a letter and I decided that it would be nice to bring in something sweet, just one last time. I had settled on the fudge (it’s so fast and easy!) and I was thinking what I could to do make it more interesting when I remembered with a jolt my chocolate rock splurge of the day before. I hadn’t had any particular plans for the chocolate rocks (other than eat them) and the idea of the little chocolate nuggets stuck in the fudge like real pebbles in mud seemed too cute not to make.

So I quickly whipped on these guys for a sweet snack or a naughty dessert.

Chocolate Rock Fudge
Ingredients:

– 2 cups chocolate chips

– 1 can of sweetened condensed milk

– 1 1/4 cup icing sugar

– 2 tsp vanilla

– 1 cup chocolate rocks, divided

Directions:

1. Line a 9″ square pan with tin foil and spray with nonstick oil. Set aside.

2. Melt chocolate chips and sweetened condensed milk in a medium sized pot over low/medium heat, being sure to stir frequently so chocolate doesn’t burn.

3. Add icing sugar and vanilla to melted chocolate mixture.  Stir until icing sugar is fully dissolved, then stir in about 1/2 of the chocolate rocks. Pour fudge into prepared pan and spread evenly.

4. Sprinkle the remaining chocolate rocks on top.  Chill in the fridge for several hours.
